Actually, it's not as simple as the first and last letters. Example, someone wrote "binars" and I read that as, well, binary; instead of the "brains" it was meant to be. It's actually word shape that we read, which is why it'd bad to type in all caps, because word shape disappears and then we do have to start reading every letter to read the word.

This page (http://www.mrc-cbu.cam.ac.uk/personal/matt.davis/Cmabrigde/) has a ton of infoarmtion about the phenoemonn, with attempts to reproduce it in other laugnages, including Spansih, French, German, Swedish, Italian, and Russian. It dsoen't say whether the effect works for them or not, though.
Other parts of the page discuss the subtleties in what sorts of rerraangements work and what don't; there are multiple effcets, including what Avychan mentions.
Also, it confirms something I suspected about Xebi's thing (which totally fooled me)--the issue isn't the "ov" sound, it's the fact that "of" is a "functional" word and we tend to ignore them when thinking consciously about sentences (or maybe it's both):
However, as a reader you might not notice this since many of the words that remain intact are function words, which readers don't tend to notice when reading. For instance, when people are asked to detect individual letters in a sentence, they are more likely to miss letters in function words.(Item #3 under 'the rset can be a toatl mses'.)

While I had seen both the rearranging trick and the "f" trick before in psychology and linguistics classes, it's still very interesting to me. There was one more that we learned along with those, but I've totally forgotten at this point. Maybe I'll remember so I can post it here.
That's a nice page that Daeyna posted, I wish I had it when I was taking those classes; it summarizes all the stuff we went over. :p
